The vineyards, located in the Albo region, are characterized by alluvial soils rich in calcium carbonate. The grapes are hand-harvested in the early morning, ensuring optimal freshness and fruit quality. In the winemaking process, the grapes are gently enclosed in tanks to maintain the unique characteristics of the terroir. 20% of the volume is fermented with whole clusters while the rest is destemmed. The fermentation is spontaneous, carried out by native yeasts at an average temperature of 24ºC. After fermentation, the pomace is pressed, and the wine is combined in concrete tanks for aging.
