The grapes for this wine are mechanically harvested and destemmed in batches of 4,000 kg. Alcoholic fermentation takes place at controlled temperatures of 26-27°C for approximately 8 days. The classic vinification process includes a total maceration period of 15 days in small concrete and stainless steel vessels. The chosen yeast strain for fermentation is Cepa Bayanus, followed by a 100% malolactic fermentation.
Crafted to perfection, Graffigna Malbec is made solely from the finest juice and does not undergo any blending. After aging in a combination of concrete and stainless steel vessels, with a 30% fruit component and no wood, as well as 70% in French oak barrels for 9 months, the final blend is carefully bottled according to the designated plan.
